Ahh, this is the way to blog.


Since Landon and I are busy doing the family tour while Rod works and lives at the Marriott, I’m not getting my kitchen creativity time in. SO I was happy to whip up this simple little open-faced veg sandwich with what was hanging around the kitchen.


First grab some whole wheat bread and baby swiss cheese. Dice a ripe tomato and stack the bread, cheese and tomato. Then place in a toaster oven for one toasting cycle.


When your sammy is done toasting, grab your store bought hummus (in a perfect life I would make this from scratch). I like the spinach artichoke hummus.


Spread 3 large dollops of hummus on the top of the sandwich. Garnish with fresh basil, sea salt, and pepper.


I’m off to catch a plane to Utah!
