I love breakfast. This is not news…breakfast (along with prime minister Landon) is the star of the blog most days. NEVER SKIP BREAKFAST. Breakfast is the most important meal of the day because it jump starts your metabolism, those who eat breakfast are more likely to make healthy choices the rest of the day, and it can help curb the ravenous hunger that can overtake you later in the day. Sometimes Rod has to leave for work super early and I always feel bad sending him out the door without something good in his gut (because I know he is most likely eating like crap the rest of the day)…but clearly I’m not June Cleaver–(there is no way I am getting up earlier than reasonable to act like I am his mother…) SO, I found a better solution.
Crock Pot Oats.
This takes literally 1 minute to prepare, cook it slow in the crock pot overnight, and wake up with your house smelling like a bakery with breakfast totally ready. Sure, instant oats are fine but they are more expensive than bulk ingredients, and are filled with difficult to pronounce preservatives and sweeteners. Plus home-made is always better.
Here’s what you need: (Serves 4)
Apple-Cinnamon Crock Pot Oats
1 cup steel cut oats (or oat groats)
1 cup rolled oats (whole)
2 tbsp chia seeds
2 tbsp cinnamon
1 1/2 cups applesauce
2 cups milk (almond or soy works fine too)
2 cups water
1 tsp sea salt (or more to taste)
+Maple syrup, Agave, or Honey to sweeten
Right before bed, add all the dry ingredients to your crock pot.
Add the wet ingredients to the crock pot. Stir. (the cinnamon might look a little weird–that’s okay—sometimes I choose to add the cinnamon in the morning after the oats have cooked as well)
Cover and cook on low.
In the morning you wake up to your house smelling like heaven and this hearty goodness.
I drizzled a little maple syrup on there for fun.
And because sometimes I burn through oatmeal quickly if I’m working out (this doesn’t happen when I eat steel cut oats), I added a tbsp of sunflower seed butter…I had to chip away at this over the course of an hour because it was so rich and delicious.
It was a big hit with Landon and Rod and if you are oatmeal people, it is bound to be a big hit with your family too.
