Guess who’s turning 2 this week?
My little buddy is definitely a little boy now.
Landon and I both woke up a little sick with a head cold this morning. Drat. However, it’s been a nice day of snuggling and laundry.
We cannot get enough of these…
He would seriously eat 20 if I would let him. (One of these days I’m going to get some pictures on my walls…)
I’ve been trying to prepare good “refrigerator” meals this week. It’s just easier to eat healthy when I plan ahead and always have good “leftovers” on hand. Soups are always better the next day so I made some Potato Corn Chowder last night and am chowing down today. Potatoes, leeks, garlic, onions, celery, thyme, and lots of corn straight off the cob.
Tonight I am going to prepare some lentils in the crock-pot and some millet or quinoa (I haven’t decided yet…how adventurous of me, I know).
Random side note: pomegranate’s are totally not worth the effort. I know, I know, they are delicious, full of nutrients and a “superfood.” But, SERIOUSLY, it takes 15 minutes to get the seeds out of one little pomegranate, by the end I’ve undoubtedly stained my shirt with the juices, and it only yields about a half of a cup of seeds.
But it sure is pretty.
Am I missing some quick way to do this? Does anyone know how to gut a pomegranate in under 3 minutes? I’d love to do a tutorial on this with some inside info.

Oh dude. Martha Stewart has a technique hitting a pomegranate with a heavy spoon that has changed our lives. So fast! Youtube or google “Martha Stewart Pomegranate.”

Peter has a colleague who works at POM and he gave Pete two little cups of their pomegranate seeds already seeded. Comes with a cute little spoon to eat them with. I don’t know how much they cost at the store, but it sure was easier than seeding them myself! lol. Except, my dad has a pomegranate tree.. so I get those for free too..
The POM things sound nice–but free pomegranate’s might be worth it

I learned that pomegranate the seeds are called Arils. Isn’t that pretty?

I was going to suggest that you get them at Costco. I’ve never splurged for the already seeded pom, but it would be nice.
I’ll have to check out the Martha thing…yeah and Arils sounds like a pretty little girl name. lol
Sorry you and PML are sick–that’s always hard with a little one. I’ve heard that you can seed a pomegranate by cutting it in half and submerging it in a big bowl of water, then work the seeds out that way. They float, then you can just skim them off. Still time consuming, though . . .
Wow, the submerging thing sounds smart. I’ll have to try that. That would at least eliminate the juices getting everywhere.
