There is something so therapeutic and nostalgic about making soup. Both of my mom’s are really great cooks and they make wonderful stews, so maybe it’s just the positive feeling from childhood that makes me love standing over a warm pot of stew when the weather starts to get cold. Since sugar has been getting the best of me lately, I’ve decided to counteract the constant buzz/headache with one of my little family’s favorite dishes, Harvest Soup. I found the recipe in The Body Ecology Diet book about four years ago and it’s been one of our staple Fall recipes ever since. It’s a hearty yet cleansing soup that even my picky husband likes.
Harvest Soup, adapted from Donna Gates “Body Ecology Diet” book.
Serves 8
Ingredients
- 1 large onion, chopped
- 3-5 cloves of garlic, chopped
- 3 new potatoes, chopped
- 5 large carrots, chopped
- 1 medium bunch of fennel, chopped
- 1 head of broccoli, chopped–stems and florets divided.
- 2-3 tbsp curry powder
- 1 tbsp ginger
- 1 tbsp sea salt
- 1 quart of low sodium veggie broth
- 3 cups water
The first thing you do is chop up a whole host of beautiful fall veggies.
Onions, garlic, carrots, fennel, red potato, broccoli stems.
Then you add a quart of veggie broth and 3 cups of filtered water, spices, and bring to a boil.
Once it’s been boiling for 2-3 minutes, Ladle 6-7 cups of the mixture into a blender and puree. (I like for there to be some chunks in the soup so I usually puree a little more than half of the mixture).
Puree for 15 seconds to 2 minutes depending on the speed of your blender. Less is usually better, because I don’t like frothy veggie puree.
Add the puree back into the stew.
Sigh at the beauty of the color.
Add some chopped broccoli tops, adjust seasonings, and bring back to a simmer (just until it bubbles), then cover and turn the heat off to sit for 3-5 minutes. Take the lid off. This is a fool-proof way to avoid over-done veggies.
And enjoy your creamy veggie stew. This tastes even better the second day and freezes really well.
I don’t usually offer soup to Landon because it’s just not worth the brothy mess, but because he saw me eating it he asked for his own bowl of “suit.” Sounds good to me. …Oh, and because I am such a smart mom, I left my camera at the in-laws so all my Halloween/soup photos were from my iPhone–and hence blurry. (DOH!)
